Vanilla Wow is much like DS1 in terms of the exploration and learning curve experience - after that it gradually became more "game"ey, and eventually today it's just a microtransaction money grind. It's a really calm and nice experience (I doubt it would be "calm" on launch though with so many people), and if you're looking for something like that - that takes a lot of time - you should try it out, it's the only place to start.

I didn't 100% Hollow knight (Didn't finish latest DLC), but the game's appeal to me was mostly the combat system and how much freedom you had, different charms (despite some being clearly better than others), recognizing openings to heal and attack. I think you can easily over-upgrade yourself making the game too easy though, which makes it lose a lot of the appeal when you can just walk up and spam attack until everything dies. The game is similar to Nier automata in that aspect.
Overall it's mostly deserves what people say about it. Of course you can be predisposed to not liking it due to this or that, but the same can be said about any game or media, I don't think there's anything wrong with that but some things deserve taking down the layer of kynicisim, and I've been trying that with these indie games recently and Hollow Knight did not disappoint.

It's really not - the general consensus now that the dust has settled is that it's among the simplest and easiest games they've made. Also there's actually like 5 mechanics in the whole game - not sure where you got that conception from.
I'd say it's as good as DS3.
