When the relatives asked why, we just said that Covid is too dangerous blah blah.
Great excuse.

Here is my turkey breast plan.

2.86 pounds

Keep internal strings on.
Rinse and pat dry.
Lift and stretch strings a bit.
Rinse and wipe it.
Optional - Wipe it with oil or butter.
Don't add water.
Roast skin side up!
Optional - Baste every 20 minutes.
For easier net removal, wrap roast in foil and let stand 10 minutes.

Cook at 325 degrees until an internal temp of 165 degrees.

Will update on how this bird turns out.

I thought it was a 3 pound boneless breast.
It was a 3 pound bone-in breast.
So most of it was bone.
No leftovers for us.

Still have tons of stuffing and my gf made mini potatoes with olive oil, garlic, and some herbs.
And she made broccoli with cheese.

holy fuck this was so good.

slow roasted pork for about 5 hours, typical spice rub

gorgeous yukon potatoes made into a rich garlicky mashed potato, served with a generous knob of butter on top

extra salt and pepper on both

the juicy tender thinly sliced pork, glistening and wet with fat and juices, pork juice mixing with potato, melted salted butter mixing with pork, it’s very much like sex in a metaphorical sense
