in the pot we used before, we need to sautee 1 diced onion+ salt, until softened and beginning caramelization. Once this happens, reintroduce the strained liquid to the pot, and set the heat to high and reduce the liquid until at half of the original volume

Now, while thats reducing, take our can of chipotle peppers, add them to a blender with all of the sauce + the cooked onion from earlier+ the san marzano tomatoes mentioned earlier.

blend this mixture into a smooth liquid, pulsing in case your blender is about 25 years old.

kosher salt is important because it’s granulated into smaller pieces than regular salt and so you get more surface area per unit mass making it more efficient

While this is happening, start shredding the chicken with your bare hands, once the chicken is shredded turn the heat down to medium low and add the chicken to the pot. Let simmer and reduce until desired texture is reached ATLEAST 10-15 minutes in the sauce

this recipe should take like 1.5 hours for a noob first time chef who needs to reread instructions over and over again but it takes me about 55 minutes
